View Full Version : Seasonal Asparagus for a light supper.

Seasonal recipe for a May Monday.

Use a Pyrex dish that must be a good 2" to 3"deep and minimum 8" across.

In the dish put in a layer of asparagus.
Add a layer of cooked diced chicken (leftovers from Sunday lunch, maybe).
Add one tin of condensedmushroom soup (Campbells or similar).
Add a layer of grated cheddar cheese.
Add a layer of breadcrumbs on top.
Bake in a preheated moderate oven 350F/ 180C for a good 30/40 minutes.
Finish under the grill to brown the top.
Serves up to 4 depending how much chicken & asparagus you have available!;o|
